Blog Design Question

I've been a hardcore Movable Type user for three years now. It's given me a shitload of grey hair but after three years I've been able to beat it into submission. So I should just let it lie and not make giant leaps to completely new platforms but that would be logical and I defy logic.
I've become enamoured with Expression Engine and I've been wanting a complete re-design for a while now. I'm surprised I've gotten as far as I have but now I'm completely stuck and standing still and ready to throw something against the wall.
Are there any Expression Engine people out here who aren't sent screaming by the tags and the alien-esque way things are done? I don't want/need anyone to do it for me, better I learn to diddle this bugger sooner or later. There are a couple of really good how-to sites for Movable Type but I haven't found one for Expression Engine yet.
The categories are what's giving me the grief, it's mind boggling.
I would be deeply and eternally appreciative if anyone could steer me in the right direction.

I have the stylesheet, thank you though. I've spent enough time with MT I've gotten to know how to diddle a stylesheet just fine. It's the tags and the actual placing of tags and sub-tags and executing queries inside a tag and other assorted horseshit.
I took the day off from fighting it to start Spring cleaning and Meathe is helping with the nasty php crap that wants to ruin my life. At least this time I'm not doing anything with it until it's finally done so I can avoid the same fuckups I had with the last re-design.
You'd think I would be putting content on some of the naked domains first but nooooooo, I have to go and fuck with the one that was pretty much done.

I'm liking it quite a bit so far. Drop me a line if you want, I can set up a blog for you to putz around with, it's another fully licensed thing. It does a lot more and is a lot easier than MT in so many ways but it's got more parts and more weird shit in it. I just can't stop until I can at least functionally diddle every blogging platform out there.
I am insatiable.

I still have to tinker with the design a little, but it like that it has a true CMS feel, rather than a traditional blog feel (if that makes any sense).
I should add that the admin control panel for Joomla is not the most intuitive.

That does make sense, I've putzed around with Mambo a bit. I like CMS, the most I've ever done with any of it was with PHP-Nuke.
That site is nice looking, very sleek. I like that.
I learned MT the hard way, I run a community blogging place for gamers and it's all me so I've gotten to know MT like the back of my hand but I hate what they've done with it. They bought Livejournal and now it's all about cross-platforming and it's over-complicated. So far, EE is the most easy to work with and it seems to do amazing things MT doesn't. WordPress to me is the most confusing of the three, I had a bitch of a time getting the Archives site for the show up and it's basic.
One of my servers has Plesk, I know all about control panels that leave much to be desired.
